| Description: | This beer is triple fermented. First in French Oak foudres, then in pinot and whiskey barrels with Brett and other bacteria, and finally bottle fermented for natural carbonation. It pours a deep obsidian color with a light tan head. The aroma is of dark cherries and other stone fruits with a faint character of the Brett and pinot from the barrels. The flavor is of dark chocolate with grapes and figs and sour notes from the Brett run throughout. It's a medium to full bodied beer with a dry finish and a lingering acidity. 8.5% ABV | |
