The latest will arrive this fall a collaboration between the chef and cider maker, and why not? Kahan and Virtue Cider founder Gregory Hall share in a reverence for local ingredients, beer (Hall is the former brewmaster at Goose Island Beer Co.), and cider. After hosting a classic outdoor farm dinner at Fennville, Michigan-based Virtue Cider for Chicago Green City Market supporters, the two went to work creating The Publican’s first private label cider. The release blends several heirloom apple varieties including bittersweets, Winesap, and Northern Spy, to offer a full-body, ripe apple and farm aromatics, a crisp, nutty flavor, and rich tannins. | |
