Description:A masterful blend of three vintages of spontaneously fermented, lambic inspired beer, meticulously aged in French oak barrels. For the last three years, when the stars and weather align, Trophy brews an entirely unique beer meant to ferment spontaneously. Simple, rustic ingredients to feed the wild yeast over time. Aged Willamette hops that lived in Trophy's rafters for over a year are used intentionally, their signature aroma stripped away while retaining their antiseptic properties. The wort is brewed and then transferred into a stainless steel tote. Then both the tote and the koelschip is loaded onto a trailer and brought out to Dix Park to an area south of the Great Field. The beer is then pushed out of the tote and pumped into the Koelschip where it will slowly cool overnight, beside a loyal stand of pine trees. In the morning, they return to collect the cooled wort, pump it back into the tote and bring everything back at the brewery. Then they fill oak barrels with the cooled wort and place them gently onto their barrel racks in the rickhouse to slumber. Over the years, time and wild yeast have work their magic, developing layers of complexity and character. Bright acidity, nuanced oak, and a delicate balance of citrus, stone fruit and farmhouse funk come together in perfect harmony. Blended to perfection, this beer is a tribute to patience, tradition and the art of fermentation. 5.4% ABV
