Description:December 13th- A beautifully complex expression from historic Belgian lambic brewers Oud Beersel, the Barrel Selection Foeder 21 is a masterful blend of spontaneously fermented lambics aged in large oak foeders that were originally used for sweet white wine. The centerpiece, Foeder 21 held lambic for nearly four years, during which it underwent a subtle maderisation (oxidative aging) that adds depth and character. This long-aged component is artfully blended with younger lambics from two other barrels, giving the beer an average age of around 37+ months. Pouring a light golden hue with lively effervescence, it presents an inviting nose of tart green apple, citrus zest, and delicate barnyard funk balanced by gentle oak and restrained vinous notes. On the palate the acidity is crisp and dry, with layers of lemony brightness, earthy complexity, subtle oak tannins, and hints of white grape or light white wine character, all wrapped in a clean, refreshing finish that retains a pleasant rustic charm.
