Description: | Bishop's Barrel No. 25 is a Baltic Porter aged in Tawny Port Barrels. The base beer is a dark, high viscosity brew fermented with their lager yeast - the same used in Summer Pils and Spring Bock. With an extended rest period on the yeast, the result is a beer with bold, dark-chocolate flavors but with an incredibly clean and crisp finish, even at the high ABV. Bishop's Barrel No. 25 reached its pinnacle after an additional eight months of aging in freshly emptied Tawny Port barrels. The chocolate top notes softened and transformed into hints of dark cherries, figs, and sun dried raisins. The light acidity from the Port wine brings a new layer of complexity and liveliness that is unlike any beer they've made. 9.2% ABV | |
