Pluots give this wild ale a hazy pinkish-peach color.  It's aged in wine barrels with strains of wild Belgian and American yeast.  It gives off tart and acidic aromas, as well as an earthy woodiness.  There is much complexity in the flavor with tart lemon, oak, sweetness from the pluots, and some grassy, earthy funk.  The barrel-aging gives this brew a very dry, wine-like finish. 7%
