Description: | Melchior is brewers, Davy Spiessens, Belgian interpretation of the Barley Wine style. At about 11% ABV, Melchior is true to style by being heavily malt based using pilsner, wheat, munich and cara malts. It is brewed using 2 English hops Challenger, East Keng Goldings and the Czech Saaz. Davy adds the Belgian influence by using mustard seeds to balance out the sweetness in the beer. The mustard works well to dry out the palate to allow the yeast to explode. The malt sweetness is a backbone for all the other taste. The hop flavors are both earthy and fruity.
