Description: | This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced from Alexandria Nicole Cellars in Prosser, Washington. The noble rot in the grapes used reduces the water content in them while magnifying their sweetness and complexity. It has a peppery, honey, pears, white wine, moscato like aroma and flavor and a dry, tart finish. And then they dump it in oak barrels and age it to intensify the flavor and add some funky, vanilla notes. 9% ABV | |
