⌂ > Saint Arnold Bishops Barrel #12

This BB release is based on BB2 with one notable exception. Both beers take Saint Arnold Christmas and age it on wine barrels with sour cherries, but this version was intentionally inoculated with wild yeast. The result is a beer that's far more complex than BB2 was upon release (We found out that BB2 also had wild yeast and it matured into a very similar beer over time) Medium full body with sharp aromas of oak, red wine, brown sugar and cherries. The flavor follows the aromas closely but the beer drinks dry thanks to the dose of wild yeast.
